Growing up, I loved to cook/bake and my mom was terrible at it. She would avoid getting in the kitchen at every opportunity, so at 5 I was making my own toast and at 8 I was baking muffins, cupcakes and pretty much anything that came with instructions!
Then in my high school Home Ec class, I learned about this fun pull apart bread that was pretty easy and really tasty. It has been with me ever since. I usually make it about once a year for old times sake, but I got to thinking the other day about this very simple recipe and decided I should start making it more often. Its very inexpensive and really easy, that I could let my 4 1/2 year old help out and we could make it our fun dessert project, each month putting a new clever tasty spin on it. So this is the first of hopefully MANY posts about Monkey/Pull Apart Bread and the Fun and Tasty Ways to spruce it up.
This month- Pumpkin Pecan Caramel Monkey Bread
Ingredients:
1/2 C Sugar
1 tbsp Cinnamon
1 tbsp Pumpkin Spice Jello Instant Pudding Mix
1 Can of homestyle biscuits
1/4 c Brown Sugar,
1 Stick of butter
1/4 C Glazed Pecans
Put the sugar, cinnamon and pumpkin pudding mix into a medium mixing bowl. cut biscuits into 1/4's and put into the bowl of the mixture. Toss to coat the dough pieces. Spray an 8" round cake pan with non stick spray. Put sugar coated biscuits in the pan, in one flat layer.
Add the brown sugar and butter to the mixing bowl and melt in the microwave for 30 seconds. Stir and pour the melted mixture over the biscuits. Top with glazed pecans.
Bake at 400 degrees for 15 minutes. Allow to cool 10-15 minutes and enjoy.
